I learned about most of this subject by reading the "Debian Policy - System Run Levels" which is located at:  http://www.debian.org/doc/debian-policy/ If you plan on understanding what gets started and stopped and how, then this is a MUST read. And don't worry, it's not such a long document that you're ready to fall asleep in the middle of it. Still under development....
